“Breakfast is the most important meal of the day!” I`m pretty sure you’ve heard that one million times by now. So, just in case you`re the type that skips breakfast altogether (on account that you are on the run in the morning and don`t have the time to make it), prepare yourselves, for this is the day your life will change. And it will never be the same again!
What if I told you of this miraculous recipe for breakfast, that you make ahead, in the evening, and refrigerate for breakfast for the next day? It`s like 5 minutes of your time in the evening. That`s it! I mean, if you are the super busy kind, you can even eat it in the car, on your way to work! I kid you not. It`s simple, it`s fast and it`s super delicious: ladies and gentlemen, I give you my favorite breakfast recipe, Banana Coconut Overnight Oats!
In case you don`t already eat oatmeal, here`s why you should totally change that:
- It reduces cholesterol, since it is a rich source of fibers and protein;
- It contains high amounts of Vitamin B, E, Iron, Zinc, Magnesium and Selenium;
- It boosts the immune system;
- It regulates blood sugar levels, giving the feeling of fullness;
- Reduces the risk of diabetes;
- Helps control body weight.
So, there you have it! Oats are pretty much a superstar in their own right and the perfect ingredient for a healthy breakfast. But healthy is not enough for mankind, that`s why we invented Overnight Oats. So here is my visual guide of “How to make Overnight Oats”. Bare with me, it`s my first tutorial. So, as you can see for yourselves, it`s really easy and quick. Step 1, in the evening, add the ingredients in a jar. You`ll need, as stated above, Oats, Greek Yogurt, Almond Milk and Chia Seeds for the basic recipe. For a quick and fun guide, check out the F52 guide on how to make overnight oats without a recipe. Of course, now you have a recipe, but that is a different story! Place the lid and shake util mixed. Put in the fridge, overnight.
If you like your overnight oats to be more runny, add less yogurt or more milk, as you wish. Also, if you are a fitness enthusiast, you can add a scoop of your favorite protein powder. Gabi, for example, adds a scoop of chocolate protein powder. It tastes delicious, as you can imagine. Oh..and you can add something for sweetness, like honey or maple syrup. I usually don`t since ripe bananas are sweet, but it`s totally up to you.
Step 2, in the morning, add the topping of your desire, and just enjoy your healthy delicious treat! Now there`s really no logical reason to skip breakfast. EVER!
I would like to point out that the visual guide contains 2 extra ingredients: bananas and coconut flakes. The reason I added them in the basic recipe is that they mix and combine well with the other ingredients, reaching a complex flavor.
For decoration purposes, we added some grated chocolate sweetened with stevia, fresh coconut and half of an After Eight thin mint. Don`t judge, it was breakfast, a little excesses goes unseen.
And yes, I used the coconut again! An item that has slowly earned a spot in the Broccoli and Muffins prop collection.

- ⅓ Cup Oats
- ⅓ Cup Greek Yogurt
- ⅓ Cup Almond Milk
- 1 Tbsp Chia Seeds
- 1 Tbsp Coconut Flakes
- ½ Banana, aprox. 50 gr
- optional, maple syrup or honey
- almonds, grated chocolate and fresh coconut, for decoration
- Add all the ingredients in a jar.
- Put on the lid and shake well, until combined.
- Refrigerate overnight.
- In the morning, add the desired topping, in this case almonds,, fresh coconut and grated chocolate.
