Is it only me, or every time I think about May, my mind goes straight to strawberries? Strawberries are everywhere this time a year. In the farmer`s markets, in the supermarkets and of course, on food blogs and magazines around the world. That being said, it`s safe to say strawberries are the uncontested star of the month. And why wouldn`t they be? The have lots of benefits, both nutritious and therapeutic. Being packed with antioxidants and vitamins (C, E, B1, B2, B6 , K), folic acid, but also minerals, like iron, calcium and magnesium. And to top it all up, strawberries are also an important source of fibers.
From the therapeutic benefits of strawberries, I would like to point out that it helps the good functioning of the nervous system, helps boost immunity and has antibacterial properties. Moreover, this wonder berries are known for curing insomnia and asthenia. Perfect for these Spring days when you crave a healthy, refreshing and nourishing dessert, right?
I could not stay immune to the charms of strawberries and I took the opportunity to prepare a couple of clean, simple and healthy recipes. Today I give you a taste of a healthy, clean eating dessert- Strawberry Chia Pudding.
Let`s see now, the ingredients! I`ll start with the star of this show-strawberries. We have a few planted in our garden, but they usually don`t live a long life. We devour them. So when I wanted to pick up a Cup for the pudding, imagine my surprise. I decided to go to the farmer`s market and help our national economy instead!

To continue, because I really craved pudding, and I don`t like the mixes in the supermarkets, or recipes with gelatin, I decided to use Chia seeds. Chia seeds have the capacity of absorbing a big quantity of liquid, forming a gelatinous paste. Only natural. That`s not all. This seeds are a sort of ambrosia of our lifetime. Here`s why I say that. They contain:
- 5 times more calcium than milk;
- 8 times more omega 3 than wild salmon;
- 3 times more iron than spinach;
- 14 times more magnesium than broccoli and
- 2 times more potassium than a banana.
So, as you can imagine, this Strawberry Chia Pudding is a force of nature. I also added unsweetened almond milk, because the strawberries were really sweet. You can add honey if you like it sweeter. Preparing this dessert is a piece of cake. It`s fast and super easy, and it doesn`t require cooking. I placed the Strawberry Chia Pudding in these lovely jars. You can serve it with fresh strawberries on top or with some homemade strawberry jam. The recipe is gonna be soon on the blog, so stay tuned.
- 2 Cups Almond milk, unsweetened, from the fridge
- 6 oz. Fresh Strawberries
- ½ Cup Chia seeds
- Blend the almond milk and strawberries, until pureed.
- Place the puree in a bowl and mix the chia seeds.
- Over the course of the next 30 minutes, whisk the ingredients every 10 minutes, to avoid the clumping of the chia seeds, until the mixture thickens.
- After the 30 minutes, cover and refrigerate for minimum 4 hours or overnight.
- Serve with fresh strawberries.
